What is the difference between AEO and SEO?

The difference between AEO and SEO is the target. SEO competes for a position in a ranked list of links, where clicking is the outcome. AEO — answer engine optimization — competes to be the passage an assistant quotes as the answer, where being named is the outcome and there may be no click at all.

The two share most inputs: crawlability, clear structure, genuine expertise. They diverge on format. SEO tolerates an introduction before the payoff; AEO does not, because an assistant lifts a passage and needs it to stand alone. Should I stop doing SEO and switch to AEO?

No. Google still sends the majority of search traffic for most sites, and the pages assistants quote are usually pages that already rank. The correct move is to keep the SEO work and change how pages are structured: answer first, specifics over adjectives, one self-contained answer per section.

Which one should a small business start with?

Start with whichever you can verify. Traditional SEO has Search Console, so progress is measurable from day one. AEO needs a prompt baseline before you change anything, or you will have no way to prove what moved. Set the baseline first, then do the structural work that serves both.
